Wine tasting:

Clean and bright blue shades like a liquid amethyst.Pipe tobacco loaded with aromatic herbs from a low mountain range reserve (Sierra de la Culebra).Direct and precise on the palate, fleshy and delicate it fills our senses with happiness. Harmony of pleasant sensations.

Winery:

We continue working in rented facilities, where we have our deposits, barrels and everything necessary to continue maintaining a craft and respectful production with the grape and wine, trying to emulate our ancestors.


Technical information:

Wine name and harvest year: Sofros 2018.

Designation of origin: D.O. Toro.

Technical manager: Ramiro Carbajo del Río.

Production: 10.500 bottles.

Viticulture: Made with tinta de toro grape from very gently cared vineyards of 5 hectares, located in a village called Morales de Toro in the territorial región of Zamora, at 705 metres of altitude.
2018, after a dry winter of low temperatures, came a rainy spring with the occasional late frost of minimal consequences. Summer was less hot than usual, which favoured a rather late harvest and a good phenolic ripening. A long and parcelled harvest lead to magnificent wines.

Soil: Sediments of sandstones, clays and limestones, with boulders on surface. Low content of organic material and an unbalanced on acidit and pH.

Vineyard age: 91 years.

Pruning system: Goblet.

Grape harvest: 21 of September, harvested in 15 kg. boxes.

Grape variety: Tinta de Toro.

Packaging:

Format: 6 bottles on cardboard box.

Pre-fermentation process:

Duration: 5 days.

Temperature: 5 °C.

Alcoholic fermentation:

Duration: 18 days with native yeasts.

Temperature: At 24 ºC reaching up to 30 ºC during some hours.

Malolactic fermentation:

On barrels.
In new French oak barrels with inoculation of lactic bacteria

Maturing in casks:

Capacity: 225 liters.

Moment of usage: New barrels with volcanic rock roast, we change them every year.

Type: French oak 100 %.

Grain size: Very fine.

Roast: Medium.

Aging: 15 months.

Switches: 3.

Physical-Chemical properties:

Alcoholic strength by volume: 14,5% vol.

Total acidity content: 5,7 g/l

Residual sugar: <2 g/l.

pH: 3,6.

Clarification: Without clarifying.

Filtration: No filtration.
